Asian Cucumber Salad

Cucumber Salad

2 cucumbers, thinly sliced
1/4 cup seasoned rice vinegar
1/2 tsp. Asian sesame oil
2 tsp. finely grated fresh ginger
2 Tbsp. toasted sesame seeds
1/4 cup chopped green onions

Toss cucumbers with remaining ingredients in a serving bowl and season to taste with salt and pepper. Chill for about 15 minutes.
