Asparagus are usually paired with lemon juice, but this recipe from Weight Watchers puts a different spin on a favorite summer vegetable. While orange juice isn’t as pungent as lemon juice, it’s a refreshing change, especially when served with some finely grated zest. Your asparagus don’t have to be piping hot when you serve them, so you can grill these first and your main course after. In hot weather, the easier the better.
WW’s recipe serves 8. I halved the amounts below since there were only 4 of us. If you’d like more, just double all the ingredients.
1 Tbsp. unsalted butter, melted
1 Tbsp. fresh orange juice
1/2 tsp. salt
1/2 tsp. freshly ground pepper
1 lb. thin asparagus spears, trimmed
Finely grated orange zest
In a small bowl combine butter, orange juice, salt and pepper. Set aside.
Coat asparagus with cooking spray and grill over direct heat, turning once, until you can see grill marks, about 5 minutes.
Transfer asparagus to a serving platter and brush with butter mixture. Garnish with orange zest.
