Here’s another riff on popular watermelon salads, this one from a weekly handout at Weight Watcher meetings two summers ago. This salad pairs the fruit with orzo, feta cheese and fresh basil. The saltiness of the cheese compliments watermelon’s natural sweetness. And the orzo? Can you think of a salad that isn’t made better by the addition of pasta? Me neither.
We Weight Watchers know that no food is off-limits. Moderation in all things and pasta is no exception. You can dig into this refreshing salad with caloric impunity. Although more substantial than its simpler watermelon/feta version, it’s considered a side salad, so plan to serve it with something you can throw on the grill, like chicken breasts or shrimp skewers. It’s summer — keep it simple, and better yet, cool.
1 cup uncooked orzo
2 cups fresh watermelon, cut into bite-sized pieces
1/2 cup feta cheese, crumbled
1 Tbsp. olive oil
1/2 cup fresh basil, thinly sliced
1/2 tsp. salt, or to taste
Freshly ground pepper
Bring a medium-size pan of salted water to a boil and add orzo. Cook until done, about 8 to 10 minutes. Drain orzo and rinse with cold water. Allow to drain completely.
When orzo is cool, toss with remaining ingredients in a medium serving bowl.
