Memorial Day Quick Pickled Onions

Put out a bowl of these for your Memorial Day BBQ and watch them disappear!

Consider, if you will, a Memorial Day hamburger without ketchup or mustard, a hot dog without pickle relish, chips without salsa. Although we rarely give them credit, condiments are what make American food taste…the way it was meant to taste. Just right! A burger without ketchup? Forget about it.

Despite their vital role in our enjoyment of food, condiments are usually relegated to the back of the refrigerator, but here is one that you’ll want to keep front and center. Red onions, when marinated in a simple vinegar solution, quickly become tangy, crunchy, bright pink, delicious. Use them as a topping for all kinds of grilled meats, sandwiches, tacos, salads even. Once you’ve tasted these irresistible sweet-salty onions you’ll find ways to enjoy them. I eat them right out of the bowl; that’s how good they are.

The recipe, from Bon Appetit, calls for kosher salt, which has larger grains than regular table salt. If you use table salt, you might want to cut back to just 1 tsp.

1/2 cup apple cider vinegar
1 tablespoon sugar
1 1/2 teaspoons kosher salt
1 cup water
1 red onion, thinly sliced

Whisk first 3 ingredients and 1 cup water in a small bowl until sugar and salt dissolve. Place onion in a jar; pour vinegar mixture over. Let sit at room temperature for 1 hour.

DO AHEAD: Can be made 2 weeks ahead. Cover and chill. Drain onions before using.

I find it easier to forgo store-bought salad dressings when I have a tasty option available. As you suggested, this dish is an option for a healthy salad dressing.

Also, I love the 2 week do-ahead strategy for this almost all-vegetable dish!

As an added bonus, using this dish as a replacement for store-bought salad dressing saves money in the weekly grocery budget.
