Greek-Style Tortellini Salad

1 9-oz. package refrigerated cheese tortellini
1 cup grape tomatoes, halved
1/2 seedless cucumber, chopped
1/2 red onion, finely chopped
1/2 cup Kalamata olives, halved
1/2 cup feta cheese, crumbled
Your favorite light Italian vinaigrette (or 1 Tbsp. olive oil combined with 1 Tbsp. red wine vinegar or lemon juice and a pinch of salt)

Bring a pot of salted water to a boil and cook tortellini according to package instructions. Drain and rinse with cold water.

Place tortellini in a serving bowl and add tomatoes, cucumber, onion, olives and feta cheese. Toss lightly with vinaigrette and serve.
