Ina’s Chunky Greek Salad

1 English or seedless cucumber, quartered lengthwise and sliced 1/4″ thick
1 red bell pepper, coarsely chopped
1 yellow bell pepper, coarsely chopped
1 pint cherry or grape tomatoes, halved lengthwise
1/2 red onion, thinly sliced
4 oz. reduced-fat feta cheese, diced or crumbled
1/4 cup pitted Kalamata olives, halved

Dressing:

3 Tbsp. Extra-virgin olive oil
1 1/2 Tbsp. red wine vinegar
1/2 tsp. dried oregano
Salt and freshly ground black pepper

Place cucumbers, peppers, tomatoes and red onion in a large bowl. Add feta cheese and olives. Mix dressing ingredients together in a small bowl and add to salad, stirring gently to combine. Season to taste with salt and pepper.
