Trader Joe’s Cauliflower Rice Stir Fry

Anne’s dinner — half a bag of TJ’s stir fry with Costco shrimp: 5 awesome WW Points.

Cauliflower rice. It’s the newest thing in healthy, low refined-carb eating. It’s not really rice, it’s raw cauliflower minced up into tiny pieces to look like rice. There are plenty of cauliflower rice recipes online, but wait. Don’t go to all the trouble. Just head straight to Trader Joe’s for their newest sure-to-sell-out product: Riced Cauliflower Stir Fry. It’s in the freezer section with the other rice stir fries.

TJ’s cauliflower rice is mixed with diced vegetables and seasoned with sesame oil and ginger, so all you have to do is pop it out of the freezer and sauté it for several minutes in a nonstick skillet. Directions on the bag suggest serving it with cooked protein. I defrosted some Costco shrimp, cut them in half, sautéed them and added them to the cooked stir fry. Champ took one bite and asked, “What kind of rice is this? It’s really good.”  I kid you not: it’s that awesome!

The bag says it serves 4; Weight Watcher Points for four servings are 2 Points. But two of us shared one bag and I figured that with 5 shrimp each, our meal totaled a mere 5 Points. Wowza!

I have just one more thing to say: when you go to Trader Joe’s, don’t buy all the Riced Cauliflower Stir Fry. Leave one bag for me. Please?
