Air Fryer Bell Peppers

When you air fry assorted bell pepper slices, you've got the beginning of an almost endless supply of meals. Here are just a few examples:


  • Eggs: add them to scrambled eggs or an omelet. Add some feta cheese.

  • Chicken and peppers: Toss them with grilled chicken, add some Parmesan and serve over rice or cauliflower rice.

  • Pasta: Toss with pasta, garlic, cherry tomatoes and maybe even some spinach. Top with Parmesan.

  • Fish topping: Warm them up and serve them over air fried salmon or tilapia. Serve with lemon and fresh herbs.

  • Stuff baked potato: Mix them with black beans, corn and salsa and stuff into baked potatoes. A little cheese on top completes the meal.

  • Make a Mediterranean bowl! Combine peppers, with chickpeas, cucumber, cherry tomatoes, feta cheese and lemon juice.


Use your imagination and what you have on hand. I added a green bell pepper to my mix, but the red, yellow and orange peppers often come in multi-packs and are sweet and delicious. Negligible in fat, calories and WW Points too!

3 bell peppers of different colors, seeded and cut into thick slices

1 Tbsp. olive oil

1/2 tsp. salt

1/2 tsp. pepper


Preheat air fryer to 400 degrees. Place sliced peppers in a large bowl and coat with olive oil, salt and pepper. Lightly spray air fryer pan with olive oil and place peppers into pan in as close to a single layer as you can.


Air fry for 10 to 12 minutes, shaking pan halfway through cooking. Remove peppers when they are beginning to char around the edges.
