BBQ Chicken, Corn and Slaw Salad

Summer in January!


It’s January and time for a reboot of our healthy eating efforts. This recipe from WW (formerly Weight Watchers) is a great way to enjoy a delicious salad with minimal effort and WW Points. Next time you buy a rotisserie chicken at the store, grab a bag of coleslaw mix and some reduced-fat ranch dressing and you’re just about there. Got BBQ sauce in the fridge and frozen corn in the freezer? You’re all set. Dig in and show 2022 what you’re made of!


2 1/2 cups packaged coleslaw mix (shredded cabbage and carrots) 1 medium scallion, thinly sliced 2 Tbsp. reduced-fat ranch dressing 1 1/2 cups diced cooked skinless boneless chicken breast 2 Tbsp. barbecue sauce 1 cup frozen or fresh corn kernels

In a medium bowl, toss coleslaw mix, scallion and ranch dressing. Divide salad between 2 bowls. In a small bowl, to chicken with barbecue sauce Divide chicken between same bowls. Top each bowl with 1/2 cup corn. Serve or cover and refrigerate for up to 1 day.

Serving size: about 2 cups
