High-Protein, Low-Fat Chicken Salad

James Bok is a popular Canadian content creator who focuses on cooking and lifestyle. He started his career in finance (one of his positions was as an Assistant Vice President at Bank of America Merrill Lynch) but quickly changed directions, becoming a full-time "influencer" on daily life, cooking and skincare. (Sounds like much more fun!) He now has more than 900,000 followers on Instagram and TikTok.

This simple salad is creamy, crunchy, absolutely delicious and insanely low in fat, calories and WW Points. I was amazed that one of the best, healthy recipes I've found comes from a Millennial!
Feel free to adjust the amounts in your salad to your preferences. Don't like celery? Leave it out. No dates? No problem. Be sure, however, to season your salad to taste with salt and pepper.

Salad ingredients:
2 1/2 cups shredded chicken (rotisserie)
1 cup celery, diced
1/2 cup carrots, diced
2 green onions, thinly sliced
1/4 cup dill pickles, diced
1 apple, diced
4 dates, minced (optional)
Dressing:
3/4 cup nonfat Greek yogurt
1 Tbsp. olive oil
1 tsp. Dijon mustard
1 tsp. garlic, minced
Salt and pepper to taste
Add all salad ingredients to a bowl. Combine dressing ingredients in a small bowl and gently toss into salad. Season well with salt and pepper.
